Yesterday, I stopped work at 2pm. I had to pop into town for something anyway, and decided to extend that and spend the afternoon cooking properly. It does mean I need to do some work over the weekend, but it had got to the point where I probably wouldn’t have finished yesterday anyway, and I decided that a pleasant afternoon cooking and making a meal for the family (minus husband who went on his own mindful little break - camping in what looks like a lovely campsite in among some woods; and plus eldest’s boyfriend).
It was ridiculously enjoyable, although the unseasonable warmth at the moment meant that it was very warm in the kitchen. I also had some Prosecco, but I am sure it would have been just as enjoyable without.
I made butternut squash soup for starter (and to have some soup in the house for big lunchtime mugs of soup - even though it’s unseasonably warm I still embracing autumn traditions like that). And then roasted new potatoes, pan-fried carrot and broccoli with chilli, garlic, soy sauce and a splash of sushi seasoning (gives it a bit of acid and a hint of sweetness) with a puff pastry roasted sweet potato and red onion tart (topped with parmesan). And… I also made pudding - banoffee pie! The banoffee pie didn’t get eaten until much later, because we were all very full from the dinner. And it was insanely rich, but delicious.
I really enjoyed it and felt very proud of myself actually taking some time out (brushing over the fact that I now have to work today). Also loved singing and dancing to loud music and the teens joining in a bit when they came in, even.
To be honest, that’s more a Sunday afternoon kind of activity, but why not switch it up and do it on a Friday afternoon and a bit of work on Saturday morning instead?
